Potatoes have gotten a bit of a bad rap, what with the propensity towards low-carbs diets recently. That’s a shame, because there’s a lot of really great nutrition in potatoes, and they’re usually very inexpensive (last month I bought a 5-pound bag for $.99)!
Did you know that potatoes are an excellent source of vitamins C and B6, potassium and fiber, and good sources of magnesium and iron, too?
While I wouldn’t use that information as an excuse to go get a large order of fries, when cooked thoughtfully, potatoes are an excellent addition to your diet!
One thoughtful recipe I found is for Spinach Mashed Potatoes. I made a few changes:
- I left the peels on the potatoes to get all the nutrition available
- After everything was cooked and drained, I used my immersion blender to really whip them up and get the dish as smooth as possible. That resulted in seriously green mashed potatoes!
- I didn’t bother with the bread-crumbs or the final bake

This dish is excellent alongside your favorite protein. Serve with a skinned rotisserie chicken for a super quick and easy dinner – that’s what I did!
