Thank you to Carol B for pointing me in the direction of the Once Upon a Chef blog! I spent a while clicking around Jenn Segal’s beautiful site and found something perfect for our needs. I know there’s a week and a half of winter left, but let’s pretend it’s summer and whip up some Sauteed Zucchini and Cherry Tomatoes.
In order to make this a part of a complete meal, I served it over whole wheat couscous and topped with some feta cheese. That literally added no time at all to getting the meal ready. It was as good the next day cold as it was hot, so leftovers are a breeze!
